Cilantro Chicken

4 pieces Boneless, skinless chicken breast, or other chicken

3/4 cups Fresh squeezed lime juice, Do not substitute

3 cloves Garlic, chopped

2 bunches Fresh Cilantro, rinsed and lightly chopped

1/4 cups Extra Virgin Olive Oil

1/2 teaspoons Salt, to taste

1/4 teaspoons Ground Black Pepper, to taste

Method of Preparation:

1. Rinse chicken and pat dry. Place chicken in a gallon ziploc bag

2. Put all other remaining ingredients in a blender and blend until well blended.

3. Pour blended ingredients over chicken in bag or dish

4. Place the chicken in a casserole in an oven for 30 min or until an internal temp of 165 degrees F is reached. Serve with your favorite side dishes. I like to serve this with Red Beans & Rice and a side salad.
