Sunday Brunch: Double Coffee Tiramisu

Double Coffee Mini Tiramisu

Makes about 10

½ cup sugar

8 ounces of cream cheese softened

2 cups of whipping cream

1 tbsp. ground chocolate nibs (optional) these can be bought at a whole foods.

¼ cup cold strong coffee or ¼ cup hot water and 1 tbsp. of instant coffee combined

½ cup coffee liquor

2 small packages of lady fingers

1 cup Dark Chocolate grated

Small Demi Tass Cups

 

Method of preparation:

 

1.
In a large bowl, combine the sugar and cream cheese and whip until smooth.
2.
Add the chocolate nibs if using them.
3.
Whip the 2 cups of heavy cream until stiff and fold into the cheese mixture.
4.
Arrange 3 lady finger cookies into the small cups, mix the coffee and coffee liquor together and just drizzle it onto the lady fingers.
5.
Spoon 1 ½ tbsp. of the cheese and cream mixture into the center of the lady fingers and sprinkle with the shaved chocolate. Refrigerate until use.
