Sunday Brunch: Banana Nut Cranberry Bread

Banana Cranberry Mini Nut Breads

Yields 4 mini loaf's

  8 ounces of cream cheese softened

¾ cup of butter softened

2 cups of sugar

2 large eggs

1 tsp. vanilla extract

3 cups of flour

½ tsp. baking soda

½ tsp. baking powder

½ tsp. salt

3 large ripe bananas mashed

¾ cup of fresh cranberries

½ cup toasted pecans

Colored sugar for topping if desired

 

Method of preparation:

 

  1. Preheat an oven to 350 degrees.
  2. Using vegetable spray, grease 4 mini loaf pans 5"x3" ( these are sold in all grocery stores) then dust with flour and set aside.
  3. In a large bowl, beat the cream cheese, butter and sugar together until fluffy. An electric mixer works well.
  4. Then add the eggs and beat well.
  5.  Add the flour, baking powder, baking soda and salt and mix well.
  6. Add the bananas, cranberries and nuts and just fold in.
  7. Divide the mixture evenly in the mini loaf's and sprinkle if desired with colored sugar and bake until for about 40-45 min or until a toothpick comes out clean when inserted in the center of the loaves. Remove and cool.

 

Note:

When very cool, these make a nice Christmas gift just wrap in colored plastic wrap and when reheated in a 275 oven for 4-5 min will bring out the flavor.
