Sunday Brunch: Cranberry Pecan Bread

Cranberry Pecan Bread

Makes 1 loaf


1 1/2 cups flour

1 tsp. ground cinnamon

½ tsp. ground nutmeg

1 tsp. baking soda

Pinch salt

1 ½ cups sugar

2/3 cup olive or canola oil

½ cup milk

1 tsp vanilla extract

3 large eggs

1 cup chocolate chips (optional)

½ cup toasted pecans chopped

2/3 cups dried cranberries we used blueberry flavored ones


Method of preparation:

Preheat an oven to 350 degrees.
Spray a loaf pan 9x5 inch with vegetable spray.
In a bowl, Mix the dry ingredients together, flour,cinnamon, nutmeg, baking soda and salt and set aside.
In a large bowl, combine the oil,sugar,milk,vanilla and eggs and whip until blended.
Slowly combine the liquids to the flour mixture and mix until blended.
Add the chocolate chips, pecans and the dried blueberries. Mix well and pour into the prepared loaf pan and bake for 50-55 min of until a toothpick stuck un the center of the load comes out clean. Let cool for 15 min. Unmold.
