2 cups low-fat milk
2 tablespoons cornstarch
1/4 cup cocoa powder
1/4 cup sugar
1 teaspoon vanilla extract
2 ounces semisweet chocolate
Method of Preparation:
1. In a medium saucepan, stir together milk and cornstarch. Turn heat to medium high. Add cocoa, sugar, and vanilla and stir constantly until pudding begins to boil and thicken, about five minutes.
2. Reduce heat to medium low, add chocolate and continue heating five minutes more until pudding is completely thickened. Remove from heat, let cool five minutes.
3. Pour into pudding cups. Eat immediately or refrigerate.
