Hamburger Tortilla Pockets

Serves 12


2 pounds lean ground beef

1 cup fresh breadcrumbs

2 eggs, lightly beaten

1 onion, grated

1/4 cup parsley, chopped

1/2 cup parmesan cheese, grated

1/4 cup sesame seeds

20 flour tortillas, halved

salsa or ketchup for serving

Method of Preparation:

1. Place ground beef, breadcrumbs, eggs, onion, parsley, parmesan, 1 1/2 tsp salt and 1/2 tsp freshly ground black pepper in a bowl. Using your hands, mix to combine.

2. Using slightly damp hands, form mixture into patties, 2 tablespoonfuls at a time. Place sesame seeds on a plate then roll patties, one at a time, lightly in seeds to coat.

3. Place burgers on a parchment-lined baking sheet. Bake in a 400 degree F preheated oven for 15 minutes, or until a thermometer reads 165 degrees F.

4. Wrap tortillas in foil. Place in oven for 5 minutes or until warmed through and soft. Form warm tortilla halves into cones and fold bases under, then fill each with a beef patty and a spoonful of salsa. Wrap with a strip of baking paper to secure.
