1 teaspoon dried Italian herbs
2 1/2 cups breadcrumbs
2 tablespoons flour
3 eggs, lightly beaten
4 chicken breasts, cubed
lemon wedges for serving
Method of Preparation:
1. Preheat oven to 375 degrees F. Place the mixed herbs, breadcrumbs, salt and pepper in a large bowl and mix until combined, then set
aside. Place the flour in another bowl and the eggs in a third bowl. Toss the chicken cubes in the flour, dusting off any excess. Working
in batches, dip the chicken pieces into the egg, then the breadcrumbs, pressing to coat well.
2. Place chicken on a parchment-lined baking dish. Bake for 15 minutes, or until golden brown and cooked through. Serve with lemon
