Whole Wheat Spinach Pasta

Serves 6


3 cups whole wheat pasta

2 cups fresh spinach

3 eggs

1 tablespoon extra virgin olive oil

Salt and freshly ground black pepper to taste

Method of Preparation:

1. On high heat, bring salted water to a boil. Add spinach and cook until tender. Remove with a slotted spoon. Chop spinach.

2. Place whole wheat flour on a counter creating a well. In a bowl whisk together eggs, olive oil, spinach, salt and pepper to taste. Pour the mixture into the flour well and start to combine. When the dough no longer sticks and maintains its shape then it is finished. Wrap the dough in plastic wrap and let rest in the refrigerator for an hour.

3. Remove the dough from the refrigerator, cut into quarters and dust with flour. Begin rolling through a pasta machine on the thickest setting or with a rolling pin. Dust if the dough gets sticky and continue rolling until desired thinness. Cut the dough into your desired shape and then place immediately in boiling salted water to cook. Once the pasta floats to the top it is finished cooking.
