1 cup durum wheat semolina flour
1 cup all purpose flour
1/2 teaspoon kosher salt
2 large eggs
2 tablespoons water
1 teaspoon extra virgin olive oil
Method of Preparation:
1. Mix semolina, all-purpose flour, and salt in a bowl. Make a well and add the eggs, water, and oil and start working the flour into to the mixture.
2. On a floured surface, knead the dough for at least five minutes, adding flour as needed if it gets sticky. Wrap with plastic wrap and let stand at room temperature for 20 minutes to rest.
3. Cut the dough into three pieces. Flatten it slightly and pass it through a pasta roller at the widest setting or with a rolling pin. Fold the dough, flour again and pass it through the roller again to desired thickness. Shape into desired shapes.
