Sweet Potato Hash
2 tablespoons extra virgin olive oil
2 tablespoons butter
1 onion, thinly sliced
3 sweet potatoes, cubed
1/2 teaspoon Worcestershire sauce
1/2 teaspoon Tabasco sauce
salt and freshly ground black pepper to taste
Method of Preparation:
1. Add 1 tablespoon oil and butter to a large sauté pan and heat over low heat. Add onion, cook for 10 minutes or until lightly brown. Remove onions, add 1 tablespoon oil, and raise heat to medium-high.
Add sweet potatoes and cook for 15 minutes until crispy and cooked through. Add caramelized onions, Worcestershire, and Tabasco.
