Caramelized Onion and Bacon Tart
6 slices of bacon, baked in the oven until crisp and drain off the fat (reserve)
2 cups of onions sliced thinly about 3 medium
1 tsp dried thyme
Salt and pepper
1 cup ricotta
1 cup milk
1/3 cup grated parmesan cheese grated
1 tart pan 9 or 10 inch fluted and covered in pie crust. Frozen pie crust works well
Method of Preparation:
1. Using the reserved bacon fat, heat it in a large skillet over medium heat and add the sliced onions and season with salt and pepper and slowly sauté them turning often until browned and caramelized.
2. Preheat an oven to 360 degrees.
3. In a large bowl, add the onions, the beaten eggs, milk, ricotta and all but 2 tbsp of the grated cheese. Sprinkle in the thyme and beat well. Dice the bacon in 1" pieces and add to the onion mixture. Pour this into the unbaked tart shell. Sprinkle the remaining grated cheese over and bake for 40 min or until set.
4. Remove and let sit for an hour before serving.
