1 pound swordfish, cut into steaks
1 red bell pepper, sliced
1 cup pineapple, sliced
1 tablespoon extra virgin olive oil
For the salsa:
4 plum tomatoes, diced
2 tablespoons red onion, minced
1 jalapeno, minced
1 cup corn
1 clove garlic, minced
1 tablespoon cumin
1 tablespoon lime juice
Method of Preparation:
1. For the salsa: combine all ingredients in a large bowl, set aside.
2. Rub swordfish with olive oil before grilling for 4 minutes on each side. Simultaneously, grill the pepper and pineapple for 2 minutes on each side.
3. Dice the pepper and pineapple and add to the salsa. Top the swordfish with salsa and serve alongside your favorite whole grain.
