
Serves 6
Ingredients:
2 cans garbanzo beans, thoroughly rinsed
2 heads radicchio
For the dressing:
1/4 cup extra virgin olive oil
2 tablespoons parsley, minced
2 tablespoons lemon juice
2 tablespoons chive, minced
1 clove garlic, minced
2 tablespoons tahini
salt and pepper as needed
Method of Preparation:
1. For the dressing: combine all ingredients in a food processors. Pulse until smooth.
2. Mix dressing with beans. Serve over radicchio.
