Kate Kelly's Hot Milk Celebration Cake

(Makes one 9" round cake or one 9" x 9" square cake)
INGREDIENTS:
The following recipes were featured during "Marathon Week," April 28, 2008 and were presented by Chef Peter Kelly, associate instructor.
INGREDIENTS:
- 2 eggs
- 1 cup sugar
- 1 teaspoon vanilla
- 1 cup flour
- 1/4 teaspoon salt
- 1/2 cup milk
- 1 teaspoon butter
- 1 teaspoon baking soda
- Preheat oven to 350 degrees.
- Butter and flour a 9" round or 9x9" square cake pan.
- In a large bowl beat the eggs with the sugar and vanilla until light and fluffy.
- Stir in the flour and the salt. Heat the milk and butter to the boiling point, dissolve the soda in the hot milk and stir into the flour/egg/sugar mixture.
- Pour into the cake pan and bake until light golden, and a skewer inserted into the middle of the cake comes out clean, about 30 minutes.
- Frost with your favorite icing and enjoy. (I use butter, confectioner’s sugar and vanilla)
