(Serves 6)

Ingredients:
1 piece of puff pastry, fitted into a 9 inch or 10 inch tart pan
1 pound apples (such as Golden apples), peeled, cored, and cut into 1/8-inch slices
1 cup sugar, divided plus a little extra
1 teaspoon cinnamon
1 egg
1/4 cup flour
1/2 cup heavy cream
3 tablespoons cognac or Calvados brandy

Method of Preparation:

1. Preheat oven to 375 degrees.
2. Toss the apple slices in a bowl with 1/2 cup of sugar and the cinnamon. Arrange them in the pastry shell. Bake in the oven for about 20 minutes. Transfer to a wire rack to cool.
3. Beat the egg and remaining 1/2 cup sugar until mixture is pale yellow. Beat in the flour, then the heavy cream, and finally the brandy.  Pour the mixture over the apples.  Return to oven for 10 minutes.  Sprinkle with sugar and bake 20 minutes longer.  Keep warm until ready to serve.
